Roaster’s Notes

Historically the decaffeination process relied on toxic chemicals like benzene, trichloroethylene, dichloromethane, and methylene chloride. These chemicals were not only dangerous to coffee drinkers but also workers and the environment. More recent “natural” methods seek to decaffeinate coffee more safely. One of these methods uses fermented molasses from sugar cane to produce a type of alcohol that is used to remove caffeine from coffee.

One of the key benefits of the “sugar cane process” is that the coffee retains much of its original flavor characteristics, something decaf has struggled with for years. I chose this bean for our decaf because it’s safe, environmentally sensitive, economically efficient, and it tastes really good. And since you don’t drink decaf for the caffeine, it had better taste good!

Roasting Schedule and Ordering Information

To ensure that you receive fresh-roasted coffee we roast to order on Mondays and Thursdays. So if you place an order on Thursday we will roast it the following Monday and will ship it out to you Tuesday.
